Preparation :

trim a 16 oz striploin of all fat, slice into 3 thin strips, marinade overnight in soy sauce, thyme, oregano, fresh ground black pepper and garlic oil

thinly slice red radishes, season generously with kosher salt, let marinade for 15 minutes, then squeeze out excess moisture

grill a thick slice of sourdough bread

let bread cool, smear with garlic/herb boursin

mix iceberg lettuce with radish and vinaigrette

season steaks with kosher salt, grill until rare, remove meat from pan, let rest for 5 minutes

Hans, Bella is such a lucky dog, it would have been good, to be by Bella’s side, enjoying the

Have a nice weekend Hans! By he way, my wife Elli mentioned that as a little girl growing up in Germany, her father and family loved their Hunt Kasser, a popular cheese that Germans still enjoy today. They have a special term for Hunt Kasser, and her father took the cheese one step
further, marinated for a few days with some secret seasoning, which one’s we don’t know. When
the cheese was ready, it took on a new name “Hunt Kasser mit muzic” We can’t find Hunt
Kasser here in North Texas, I had to laugh about the Muzic, I guess this cheese had to be enjoyed at home, as the story goes – Fact or Fiction?

Incidentally, “Handkäs mit Musik” was my mothers favorite cheese. She was from Langenselbold in Hesse, where this cheese enjoys popularity.
(Nobody in our family shared her love for this cheese and to this day, I can’t find the love for it 🙂 😦 )
The proper name is “Handkäse” and you should be able to find it online or at “Whole Foods Market if there is one in your area.
My mom used to marinade it with chopped onions, black pepper, oil, vinegar and caraway seeds.

Thanks Hans, my apologies in the improper wording and spelling of the Handkase, I did this on my own, if Elli knew that I asked for your help, on this one, she probably would have chastised me, for not coming to her for the proper spelling of this kase. Now that I have the
proper seasoning for this cheese, we can see where we will end up for the day, I may have to
sleep in the car for t he night! Yes, we have a world market and I will check it out very soon.
Elli too, never ate the cheese, Papa Roth, was the only one who loved it. The girls always left
the house for a late movie, but mother had to endure what was yet to come. All ended well
however.
All the best in the kitchen, I bet bella can’t hardly wait for another special treat, from a master
chef, I bet her favourite spot in the haus, is the kitchen!
