Hi Alfred,
there is not ONE food cost. The desired food cost depends on many different factors, such as rent, labor, “mixed food cost”, (average of different items), seasonal adjustments, a la carte sales or banquets, whether there is a sales price of the food or maybe an all-inclusive property, where you’ll get a percentage of total sales of the property to cover your cost, etc….. As a rule of thumb, in an la carte setting, you want to calculate a mixed food cost of 22% – 32 %, again depending on all your other expenses which can vary tremendous from case to case.
