Easy Does It # 38 – Slow Roast Crispy Duck, Creamed Spinach, Pommes Croquettes & Red Wine Jus

after 3 H/45 M, turn the temperature to 420F (215 C) remove the duck with the rack to another tray (I used a cast Iron pan) roast breast-side up for another 20 to 30 minutes or until the skin is very crisp and golden brown, remove from oven and let rest for 10 Minutes before carving
