CConvenient Food (Pansit / Pancit)

in 4 tblsp peanut oil saute 1 tblsp garlic paste, 1/2 cup finely sliced onion, 1/2 cup finely sliced carrots and 4 stalks of scallion, cut into 1 inch pieces (use any kind of veggie you like, cabbage, broccolini, zucchini, whatever you like and have on hand)
