Spaghetti With Walnut, Cashew & Cilantro Pesto, Dried Cranberries And Pecorino Romano

Dear Friends,

I had to think long and hard what I’ll do without Maria. I came to the conclusion that she would not have wanted me to give up life at this point (I was close, but thanks God for Bella…).
I am aware that the pain of losing her will never go away, but I will have to take care of Bella and myself in order to honer the memory of Maria.
Since Maria was the biggest fan of “ChefsOpinion”, I have decided to start posting again and hope that she still enjoys reading it wherever she is and sharing the dishes with me in spirit.
I hereby dedicate all future posts to Maria and our love for each other, our love for sweet Bella and our love for good food everywhere 🙂

Todays lunch had all the usual ingredients of my cooking style :
Lot’s of taste, texture and simplicity.

Spaghetti With Walnut, Cashew & Cilantro Pesto, Dried Cranberries and Pecorino Romano

  1. So glad to see you posting again! I truly believe that though you’ll always miss your Maria, she’ll always be with you. So glad that Bella is a comfort, know how many times my goofy pets have gotten me through rough times. Will definitely try your latest creation, never would have thought to add dried cranberries! This is a perfect easy summer recipe to add to my collection, with this heat lately I’m not inclined to cook heavy meals. Fan as always, Edwina

  2. Chef…. I cannot tell you how happy I am to see you back up and running! Julian

  3. It is refreshing to see you back in the Game,
As much pain life give us…we must keep on going, and I wish you the best to come, from the deepest of my Heart…you surely are a inspiration to all of us… Please never give up…
    With utmost respect,

    Sincerely GL

  4. Chef Hans. It is so nice to hear from you once again. To have you dance across our palates while you educate and entertain us is always going to be a treat.

In time, it will get just a little easier for you to live with the pain of your loss and the void it brings with it.

My wife and I lost our eldest son at the age of twenty-five. His death was accidental, there was no illness or warning. He and I talked on the phone one day and he was gone the next. He was a very loving man in every regard and the pain of losing him has never gone away. He will live in our hearts until our own passing just as your darling Maria will surely live in yours. I wish I could remember the poem and the poet who wrote about losing an especially loved person, in essence he’d written; As long as there is one person who remembers them with unconditional love, no one truly passes on or ever leaves us.

Good to have you back my friend, I’m looking forward to new and different discoveries.

    Kindest regards, Chef Jack Ferneley.

  6. I sat in front of my computer work back logged to over 100 mess, video editing and such to do, and thought of you. I had vast hopes and desires to return to the passion of food. Grand smile to see you have. Chef John
